"His name's Bentley, he's an Airedale terrier [and] he's adorable," she told PEOPLE at last weekend's opening of artist Tom Everhart's Crashing the Party: The Arty-Fact Paintings New York exhibit. "He's the best dog. I love him to death."
Everhart's work, which incorporates images of the Peanuts beagle Snoopy, also made Simpson reminisce about her late dog Daisy.
"She would have loved all of this," she said of her Maltipoo, who died in 2009 after being snatched by a coyote. "She might've barked at him, thinking they were coming out to get her."
As for Simpson and Bentley, though it's smooth sailing now, theirs wasn't a case of love at first sight.
"At first he would growl at me, and now he comes and snuggles up to me," said Simpson. "It's like I have a brand new dog."
Moving forward, Simpson and Johnson have not ruled out adopting another pet. "Eventually, I think we want to get something," she said. "Whoever Bentley will get along with."
